Make a cornstarch slurry
Add shrimp with salt and pepper.
Cook shrimp with vegetables and sesame oil.
Stir sweet peppercorn with zucchini, garlic, ginger and pineapple.
Add the sweet and sour sauce, cook over a low heat for two minutes.
Stir the mud and cook until thick for 30 seconds.
Add shrimp and cook over low heat, then garnish with green onions and sesame seeds.

When choosing shrimp, the best way to choose is to choose how many pieces per pound to determine the size. I love the 16/20 count, which means that many pieces per pound. This gives about shrimp from a bite that will not quickly overtake in a hot skillet. It will take less than two minutes to cook the shrimp completely, so keep a close eye. The Shrimp Overcook will curl in a tight "C" shape and the texture will be chewy instead of tender.
For shrimp, I'd like to freeze, pound and submerge but with a tail. You can definitely use those without the tail. It is entirely up to you.

  • 1 pound peeled shrimp (medium or large)
  • Two tablespoons of cooking oil
  • 3 cloves garlic, minced
  • Chopped green onions
  • White sesame

Sweet and sour sauce

  • 3 tablespoons of ketchup
  • 1 teaspoon chili sauce for example: Sriracha, (Optional)
  • 1 1/2 tablespoons of soy sauce
  • 1 1/2 tablespoon sugar
  • 5 tablespoons of water
  • 1 teaspoon cornstarch


  1. Rinse and drain the shrimp and allow it to dry using paper towels and set aside.
  2. Mix all ingredients with sweet and sour sauce together. Stir the mixture well. Sit aside.
  3. Heat a skillet with cooking oil over a high heat. When heated, add garlic and stir until garlic becomes light brown. Add shrimp and stir until white. Add the sour and sour sauce and let it cook for one minute or until the shrimp is tender. Add more water to soften the sauce if it dries or becomes thick.
  4. Garnish with chopped green onions and white sesame and serve immediately.
