  • ¼ cup a little soy sauce or regular soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon packed brown sugar
  • 2 tablespoons of oyster sauce
  • small teaspoon of roasted sesame oil
  • 3 tablespoons of vegetable oil
  • 1 shrimp shrimp, clean and season with a little salt and pepper
  • 3 cloves of minced garlic
  • 1 inch piece of fresh ginger, peeled and grated
  • one sherry cup
  • 2 tablespoons cornstarch, well mixed with half a cup of cold water until smooth
  • 1 cup cashew, unsalted
  • Ground white pepper to taste, you can use black if necessary
  • 2 green onions, sliced
  • Rice cooked to serve


  1. In a small bowl, mix soy sauce, vinegar, wine, brown sugar, oyster sauce and sesame oil. Sit aside.
  2. Heat vegetable oil in a large skillet or large bowl over high heat, add shrimp and stir until it becomes pink (about 2 minutes). Remove from pan and set aside.
  3. Using the same skillet, add garlic and ginger and stir the mixture. Cook for about one minute.
  4. Pour in sherry. Move it, scraping the bottom of the pan to loosen all the tasty pieces that might be stuck in the pan. Cook for two full minutes.
  5. Turn the heat into a low medium and pour in the sauce mixture, then mix in the cornstarch mixture. Stir the sauce for 1 to 2 minutes to thicken, then add cashews and peppers (if desired). Stir to cover everything with the sauce. You can add a little water if the sauce looks very thick. Add shrimp to the sauce.
  6. Sprinkle green onions. Served with cooked rice.


* Add vegetables as desired (if you are vegetarian, you will love this recipe of shrimp and cashew nuts).
