Toast of Chinese shrimp is one of my favorite starters. They are commonly served in faded restaurants, they are crispy and delicious, with a white toast filled with shrimps and fried to golden perfection.

Vietnamese and Thai cuisine have a similar version of this shrimp toast, but flavored with fish sauce. They are comparable in taste and texture.

This is a Chinese recipe. It is authentic, non-greasy, light and delicious.

The best shrimp toast should be crispy, airy and light. It should not be soaked in oil after deep frying.

Get good quality white toast that is denser and more texture-friendly. They do not absorb so much oil during the deep frying process.

Shrimp Toast with Sesame Recipe

Shrimp mousse

  • 8 ounce pounded and deveined shrimp
  • Salt 1/2 teaspoon
  • Half a teaspoon of sugar
  • 1 teaspoon of sesame oil
  • 3 dashes of white ground pepper


  • 3 Pieces of white toast (thick white toast)
  • Oil, for deep frying
  • 3 tablespoons of sesame seeds
  • 1 tablespoon of black sesame seeds


  1. Rinse the shrimp with cold running water, and allow it to dry with a paper towel. Add shrimp and all ingredients to the food processor. Mix well until shrimp becomes sticky like mousse. Remove from food processor and set aside.
  2. Cut the white croutons using the bread knife. Discard the crusts. Cut each toast in length in half, then in width in six rectangular pieces. Mix the sesame seeds in a small dish. Sit aside.
  3. Using a butter knife, spread about 1 tablespoon of shrimp mousse evenly over each piece of toast. Shrimp tiger in sesame bread until the surface is covered with sesame seeds.
  4. Heat 3 inches of oil in the skillet or small stock to 350F. Gently drop the shrimp toast with sesame on the bottom. Flip and dry the white toast until it becomes light brown, put it outside with a colander or spoon for a specified period of time, and filter the excess oil on paper towels.
