Marinated Grilled Shrimp Recipe

Ingredients

  • 1 pound large shrimp peeled and stripped (you can either leave tails or remove them)
  • A quarter cup of olive oil
  • 2 tablespoons lemon juice
  • 3/4 teaspoon salt
  • A quarter of a teaspoon of pepper
  • 1 teaspoon of Italian spices
  • 2 teaspoons minced garlic
  • 1 tablespoon of chopped parsley
  • Lemon wedges for service

Instructions

  1. Put olive oil, lemon juice, salt, pepper, Italian spices and garlic in a resealable plastic bag. Seal and shake for collection.
  2. Add shrimp to the bag and chop it. Toss the coat evenly with salt water.
  3. Soak for at least 15 minutes or up to two hours. You don't want to marinate for longer than that, because the acid in the lemon juice will start to cook the shrimp.
  4. Thread shrimp on skewers. Heat the grill or grill pan over medium high heat.
  5. Place skewers on the grill. Cook for 2-3 minutes on each side or until shrimp becomes pink and opaque.
  6. Broiler directions: preheat broiler. Place shrimp skewers on a pan covered with cooking spray. Grease for 2-3 minutes on each side or until the shrimp becomes pink and opaque.
  7. Sprinkle parsley and serve with lemon wedges.
